I’m so excited to tell you about these new gluten-free, vegan, soy-free buttery sticks from Earth Balance. They have been making baking in the Daily Forage kitchen tasty and even easier.

I’ve used Earth Balance in my kitchen since the very beginning of my gluten-free, dairy-free journey. You may remember my product review of Earth Balance Soy-Free Buttery Spread and Vegan Buttery Sticks from a few years ago. I’ve loved every delicious bite I’ve baked with them.

When I decided awhile back that the Vegan Sticks weren’t the best product for me personally, since they contain soy and I now do my darnedest to avoid soy (it doesn’t really agree with my gut), I made sure that all of my baking recipes could perform perfectly using the buttery spread. And I’ve achieved that. But we all know that sometimes a more solid fat makes the process of certain recipes simpler.

I’m here to tell you, as I will always do honestly, that these Earth Balance Soy Free Buttery Sticks are a very welcome addition to the Daily Forage kitchen. No longer do I have to make a choice between using a soy-containing product (and potentially compromising how I feel) and working harder to get a delicious, and properly textured, outcome. I can have my cake, and pie, and crumbles, and biscuits, and eat them too, literally.

I still use the spread for many of my recipes, but you’ll see that in many upcoming recipes I’ll be using these soy-free buttery sticks … so you and I can both relax a bit. Gluten-free, dairy-free baking should be fun, not a process. We have enough changes to adjust to (flours, gums). We’ll go for delicious, safe, healthier, and simpler choices whenever possible, right? Of course!

Earth Balance Soy Free Buttery Sticks add more structure to biscuits, allowing for better rising. My gluten-free, dairy-free cinnamon rolls hold their shape better, and the dough is much easier to roll out and roll-up into its classic jellyroll form. And pie crust? These soy- free sticks create an even more tender, flaky gluten-free, vegan pie crust texture … all still with that creamy, buttery flavor.

Honestly, I don’t know how something can taste so much like butter and not be butter. But we don’t have to worry about that … Earth Balance is taking care of that department.

Since I always recommend using frozen “butter” for pie crusts, for years I’ve been measuring out the correct portion of the natural buttery spread with a measuring spoon (to achieve the small size pieces) then freezing it. It works, but it’s a bit tedious and messy.

Now I simply cut the soy-free buttery sticks into small cubes and freeze the correct portion in baggies. And since each stick equals a half-cup portion, measuring out the correct quantity is simply accomplished with a quick slice of a knife. My homemade gluten-free pie crust recipe actually calls for exactly a half cup “butter”. So simple!

  1. What do you add or take out of your recipes so that this butter works? I know it isn’t 100% oil so..

    • Insightful question!! That is precisely why I only use Earth Balance products, because they substitute 1:1 for the real thing and there are no alterations required to the other ingredients. There’s enough alchemy that is required for figuring out gluten-free, dairy-free baking, so I LOVE recommending a product that doesn’t create a whole domino effect to the baking process. Use in place of butter just as butter is called for in your favorite recipes. Thanks for stopping by and asking the question! I’m sure others might be curious about this as well.

  2. Are the sticks ingredients the same as the container? Can I use the sticks for example
    for spreading on bread or its just for baking?

    • Hi Robin. There are quite a few differences in the ingredient listings of the container vs the sticks. With that being said, I have used the container version for many of my baking needs, as well as the sticks. And I’ve used the sticks for spreading on bread, but the stick form doesn’t spread as easily because it is a firmer consistency. If you wish to only buy one product, I would suggest getting the sticks (I do like them better for baking personally) and then just let the sticks sit at room temperature for a few minutes (not more than 30) to soften for spreading. I also have put the sticks in the microwave on very low and warmed them for 10 seconds at a time until I reach my desired consistency. I hope that helps. Thanks for stopping by! xConnie
