Gluten, Dairy, Soy, Egg Free Soft Gingerbread

Soft gingerbread, with a texture midway between Bundt cake and birthday cake, is perfect. It seems to fit the bold, not overly sweet flavors, and can easily be eaten out of hand … with frosting or not. Or try it both ways, for good measure!

Gluten-free Dairy-free Orange Coconut Italian Biscotti Pie Crust

Once I made my Gluten-free, Dairy-free Orange Coconut Italian Biscotti, I just couldn’t resist turning it into a gluten-free, dairy-free crumb pie crust. It has the perfect flavors to complement the right fillings, such as a pumpkin custard or creamy chocolate pudding. And with pie season coming (really it’s here already in my mind), there’s never a risk of having too many pie crust recipes. Don’t you agree?

Gluten-free Dairy-free Fresh Corn Nectarine Salsa

A fresh, raw salsa can brighten up any dish. I find using homemade salsas that are naturally free of gluten, dairy, soy, sugar, preservatives, and too much salt, bring out so much flavor. They are a perfect way to cool down and liven up your warm weather grilled chicken, fish, burgers, and even hot dogs.

Gluten-free Dairy-free Mexican Fish Tacos

I’ve shared a taco recipe in the past in which I talked all about how to put together a killer taco bar with tons of fixin’s. While I like that a lot, what I really appreciate about this fish taco recipe is how with very little work, and simple ingredients, the flavors are so authentic and rewarding. Clean, fresh, and true. What’s not to like?

Mexican Sweet Corn Cake

Gluten-free Dairy-free Mexican Sweet Corn Cake

Mexican sweet corn cake, in case you’ve never had the pleasure, is this creamy, sweet, mash-like-ultra-moist-cornbread-like baked dish. It is speckled throughout with whole and chopped super sweet corn kernels. The starch from the corn creates a texture and mouth-feel similar to … well, nothing I can really say resembles this texture. It is such a great texture, just one of its own design (okay, my mouth is already watering).

Roasted Green Tomatillo Salsa Verde

You guys, this salsa recipe is so easy! But better than that, it will take your taste buds on a ride to flavor town. The quick roasting brings out the tang (and mild sweetness) of fresh green tomatillos, the jalapeño peppers gain a rich earthiness, and the onions and garlic become sweet to balance everything out. Then the fresh cilantro and a splash of lime and your mouth is on this exhilarating roller coaster of bright, sour, and green liquid loveliness. Oh yeah! Perfect for celebrating Cinco de Mayo, but you certainly don’t have to wait for that excuse to treat yourself to this salsa!

Gluten-free Dairy-free Cashew Butter Cup Easter Cutout Cookies

I used to LOVE, and miss, those Easter-only Reese’s Peanut Butter Cup Eggs! But I’m not one to sit and be bothered permanently. So I created my own Easter egg nut butter cups. And to keep from being a Reese’s copycat, I decided to put a cookie twist on them. Now, I’m not saying that I’ll ever stop reminiscing the days of old, but I certainly don’t have to feel a longing for them anymore.

Gluten-free Dairy-free Lemon Poppy Seed Coconut Finger Cakes

This recipe creates little “cakes” that are really more of a cross between a scone and a muffin. They’re tender and light in texture, with a very mild sweetness to them. I love how the almond, coconut, and oat flours create a “whole grain” mouthfeel. And the coconut and lemon together … well, … it’s fabulous!
