We’ve been having so much fun in the Daily Forage kitchen making delicious homemade juice (using our Hurom Juicer) and rich and creamy smoothies, we thought we’d try making some smoothie popsicles. This Carrot Peach Ginger Smoothie Popsicle recipe comes from thinking a bit outside the box. It is refreshing and has a bright flavor profile. We used carrot juice as the base, added a hint of ginger to complement the carrots and to introduce a bit of fresh zing, then included frozen peaches to create the smooth and thick texture that we love in a smoothie. We blended in a splash of almond milk to finish off the creaminess factor. These have a sweet element, too, from a touch of honey, but these gluten free, dairy free popsicles are definitely not the sweet-ladened popsicles from your grocer’s freezer. Try stepping outside the box and treat your tastebuds to something different, refreshing, and healthful. You might start creating combos you’d never dreamt of before … we did!

 

No Dairy Bug No Gluten BugPrep time: less than 10 minutes

Freezer time: a couple of hours

Makes: 4-5 popsicles

 

Ingredients:

1 cup carrot juice, either juiced at home or purchased juice

1/2 inch thick disk of ginger, either juiced or finely minced

1 cup frozen peaches

1/4 cup almond milk – I used unsweetened vanilla

1 Tablespoon honey, or to your sweetness preference

 

Directions:

In a blender, combine carrot juice, ginger and peaches, and almond milk. Blend on low, then increase speed to high, and blend until all ingredients are smooth and creamy. Blend in honey. Pour smoothie into popsicle molds and freeze until solid. Enjoy!
