We’ve created a kicked up gluten-free, dairy-free Mexican food dish. Spicy salsa … crunchy chips … crispy, fried eggs … fresh, bright cilantro … tart, bold lime … perfect Mexican food for breakfast or a light meal … EXPLODING with flavor. And, of course, this recipe is gluten-free and dairy-free! It doesn’t get much better than this!
Gluten-free Dairy-free Huevos Rancheros Mexican Eggs
Cooking time: less than 10 minutes
Rest time: none
Makes 1 serving.
Ingredients:
2 fresh eggs
2-3 Tablespoons olive oil
pepper, to taste
3-4 Tablespoons spicy salsa (up the flavor quotient by using spicy salsa) – I use Pace Picante Salsa
2 cups blue corn tortilla chips, crumbled into coarse pieces – Food Should Taste Good are gluten-free
1/2 ripe avocado, peeled and sliced
1-2 Tablespoons cilantro, coarsely chopped
wedge of fresh lime
1 teaspoon chopped chives, for garnish
Directions:
Heat 1 Tablespoon oil in cast iron skillet or nonstick pan, until very hot but not smoking.
Crack eggs into pan and cook until crispy and golden on edges and whites are fully cooked. Cook until yolks are done to your liking. Sprinkle with pepper. (This recipe doesn’t really need extra salt since there is salt on the chips.)
Heat 1 Tablespoon oil in a separate small cast iron skillet or sauté pan, when eggs are just about finished cooking.
Add tortilla chips to the warm oil and stir well. Add salsa to chips and heat, stirring well, until chips have softened slightly. Add additional oil if chips are a bit dry and sticking to the pan. They should not be oily though.
Spread chips onto serving plate.
Top chips with cooked eggs. Add avocado to plate. Squeeze lime over eggs and avocado, if desired. Sprinkle cilantro over eggs and garnish with chives.
