Easy Gluten Free Dairy Free Chocolate Ganache Filled Shortbread Cookies, photo:recipe by Daily Forage 2011These gluten-free, dairy-free, ganache-filled cookies are super quick, super easy, and super yummy! But with a little touch of fancy to them. Since the cookies are pre-made by Schar, the dessert comes together in about five minutes and is ready to enjoy in about ten minutes. The ganache stays creamy and smooth, but holds its shape beautifully. Delicious in a dash!

Ingredients:

10 oz. Enjoy Life Semi-Sweet Mini Chocolate Chips, divided

2 teaspoons light corn syrup

6 Tablespoon Earth Balance Natural Buttery Spread (red tub)

Schar Gluten-free, Wheat-free Shortbread Cookies

 

Directions:

In a double boiler over simmering water, begin melting 6 oz. chocolate chips, corn syrup, and Earth Balance. When melted about half way, remove melting pot from double boiler so chocolate-filled pan can begin to cool. Stir chocolate ganache mixture until completely melted. Add remainder of chocolate chips into chocolate ganache and stir gently until all chocolate has melted. Let rest about 2 minutes. Chocolate is ready for use. 

While chocolate is melting in pan, place cookies on flat surface such as a cooling rack. When ganache is finished cooking and has cooled about two minutes, put about half of the ganache in a plastic freezer baggie. Remove as much air as possible and push all ganache to one corner of baggie. Twist the opposite end of the baggie to make a piping bag effect. Carefully snip the chocolate-filled corner of the baggie, being careful not to squeeze while snipping or the ganache will begin pouring out. Carefully pipe the ganache into the center depression of each shortbread cookie, swirling the tip a bit to make a soft peak in the center of each cookie. The ganache will settle a bit but will keep the peak shape when cooled. That’s it! Easy and ready to enjoy in about 10 minutes … if you can wait that long!
