Thomas Keller Brings C4C Gluten Free Flour to Williams-Sonoma

C4C Gluten Free Flour, photo courtesy of Williams-Sonoma A new flour has been introduced into the gluten-free product marketplace. It was created through collaborative efforts between Thomas Keller, award-winning chef, restauranteur, and author, and his research chef, Lena Kwak. 

This new gluten-free flour, C4C (Cup for Cup), earned its name for its ability to be substituted into a recipe in equal portions, i.e. cup for cup, in most recipes calling for all-purpose flour.

The ingredients, which are all natural and 100% gluten-free, include cornstarch, white rice flour, brown rice flour, milk powder, tapioca flour, potato starch, and xanthan gum. 

The flour is available exclusively through Williams-Sonoma, both in stores and online. Each 3 pound bag retails for $19.95.
