Creamy risotto can make even a simple dinner seem special. And it’s much easier to prepare than you might think. Risotto requires more attention than cooking regular rice. Cooking basic rice is simply bringing water and rice to a quick boil, then reducing heat, covering, and letting it cook uninterrupted for the required time. Risotto is more of a bathe-and-stir process. Simple, but not unattended. Because the “add-in” ingredients cook while the risotto is cooking, the whole process really doesn’t take more time than many easy weeknight meals, so if you’re feeling intimidated by it - please don’t.

Peaches are coming into season right now and are offering sweet, tender, juicy, fresh flavors. That’s why I couldn’t resist when I saw a perfectly ripe batch at my local market last week. I bought seven. I never do that! But they were calling my name ... so I caved. Boy am I glad I did. Three of them disappeared the first day. I hid the remaining four for my pie.
Some people ask me why I take a perfectly good apple pie recipe and then pollute it with other fruit ... my dad was one of these folks. Sorry, Dad! The truth is, I think apple pie makes a really delicious platform while allowing other fruits and flavors to shine through. So I tinker. If you are one of these non-tinkering, leave-well-enough-alone types, then you can easily make my apple pie recipe and simply leave out the other fruit. You may want to cut back about a quarter’s worth on the other filling ingredients, but the pie will turn out deliciously. If, however, you like tried-and-true (knowing the recipe will put out trusted results) recipes, but like to explore new flavor combinations sometimes, then join me in this new pie recipe adventure ... basic gluten-free, dairy-free apple pie ... with a sweet peach embellishment.

Who doesn’t love a sweet and creamy chocolate peanut butter cup? I know I did. But not being able to have peanuts since 2002, I’ve missed these little bite-sized snacks. I always thought it would be too daunting to attempt a homemade version using almond butter instead. I was wrong.
With a little research, a little bit of experimentation, and a lot of fun licking my fingers during the recipe development process, I’ve learned that gluten-free, dairy-free, vegan dark chocolate almond butter cups are well worth the effort ... and really not that daunting at all.
*** Using a scale is the most accurate way to measure gluten-free flours, since not every “cup” of flour is equal to the next when measured by volume (even within the same flour type). Also, each type of flour also has a different density, which will result in a different weight per measured cup. ***
*** Using a coffee filter to cover your freshly baked gluten-free treats helps protect them while still allowing for air circulation and proper cooling. ***
*** Sifting baking soda, baking powder, and xanthan or guar gums help them incorporate into the flour mixture better. ***
