… A Gluten Free, Dairy Free Cool Down During the Dog Days of Summer … Again!
A couple of weeks ago I thought summer was coming to an easy wind down and autumn was on its way here in Minnesota. The hot, steamy, stifling humidity had broken and the air was dry. We were waking to crisp morning temperatures, and the evenings were more comfortable donning a light sweater, at least for me, than going bare shouldered as previously. Then as quickly as the weather had turned pleasant and refreshing, it boomeranged right back into the hot, though not quite as humid, dog days of summer. So I’ve decided that refreshments are in order, once again, to bring about a bit of comfort.
Here is a quick and simple gluten free, dairy free smoothie recipe that is sweet and refreshing. I think it is great as is for a healthy start to the day, or as a lunch accompaniment. If you want to enjoy an adult smoothie to help celebrate the last bit of what summer has to offer, perhaps while sitting on the front porch swing, you can swizzle in a splash of Disaronno Amaretto. It complements the cherry juice base quite nicely.

Servings: about 2
1 1/2 cups frozen peaches
1 cup cherry juice
1 1/2 cups triple berry blend frozen fruit (combo of raspberries, blueberries, and blackberries)
Add all ingredients to blender and blend, beginning on low then gradually increasing speed to high, until all fruit is smooth and smoothie is a consistent and creamy texture. Enjoy!
